Soy empanadas

For empanada lovers.

INGREDIENTS

  • 250 grams of SOJAMIX
  • 2 bell peppers
  • 3 onions
  • 4 eggs
  • 100 grams of olives
  • 2 packages of pastry lids empanadas
  • Soy sauce n/a
  • Seed Mix (optional)
  • Spices to taste: salt, black pepper, condiments for empanada

PREPARATION

  1. Hydrate the soy with water and let it stand for 20 minutes if the water is cold. If not, 10 minutes for hot water.
  2. While you wait for the soy to hydrate, chop the onions and peppers and mix them in a pan.
  3. Add the already hydrated soy and the soy sauce. Add the seasonings to the preparation too.
  4. Once removed from the heat, add the hard-boiled eggs and olives.
  5. Collocate the preparation on the empanada pastry lid, and color the empanadas with egg. If you want, you can include a mix of seeds to put on top of the empanadas too.
  6. Finish cooking in the oven or as you prefer.
