Skewers of textured soy meatballs and vegetables

An easy, delicious and quick recipe to make.

INGREDIENTS

  • 200 grams of SOJAMIX
  • Chicken stock
  • Basil n/a
  • Parsley n/a
  • Ciboulette n/a
  • 100 grams of chickpea flour/normal
  • Batter or extra fine soy
  • Sweet pepper, onion, eggplant

PREPARATION

  1. In a bowl, hydrate with warm water the soy and the chicken broth for 30 minutes.
  2. Then drain it and add to it pepper and salt upon taste, 100 grams of chickpea flour and basil, and previously chopped parsley and ciboulette.
  3. Mix it well and let the mixture cool down for half an hour.
  4. Afterwards, make the meatballs and batter them.
  5. Bake them or fry them (we leave this up to you).
  6. While the meatballs are being made, chop and cook the bell peppers, onions and eggplants (or the vegetables that you like the most).
  7. Put the meatballs and cooked vegetables on a skewer and enjoy your brochettes.

You can also freeze the meatballs so that you can cook them on another occasion.
