Peppers and stuffed zucchini

Smaze your guests with this super easy and complete recipe.

INGREDIENTS

  • 250 grams of SOJAMIX
  • 2 big bell peppers (for 4 units)
  • 4 zucchinis
  • 1 scallion
  • 4 eggs
  • Soy sauce n/a
  • 200 grams of cream cheese

PREPARATION

  1. Hydrate the soy with water and let it stand for 20 minutes if the water is cold or 10 minutes if it is hot water. Don't forget to drain it later.
  2. Wash the bell peppers, cut them in half and remove all the seeds.
  3. Warm them up for 2 minutes in the microwave so that it softens. 
  4. Cup the zucchini very carefully with a spoon and keep the leftover.
  5. Chop and mix the scallions. Add the previously drained soy and soy sauce.
  6. Remove the mixture from the heat and add the zucchini leftover and the hard-boiled egg. Do not forget the seasonings.
  7. Place all the stuffing inside the bell peppers and the zucchini.
  8. Add cream cheese or fried eggs on top, and take them in the oven for about 5 minutes.
