Crispy potatoes with alioli and soy bolognese

Ideal for tapas.

INGREDIENTS

  • 250 grams of thick SOJA MIX
  • 1 bell pepper
  • 1 onion
  • 5/6 crushed tomatoes
  • 2 eggs
  • 8 small potatoes
  • Spices to taste (salt, pepper, oregano, parsley, rosemary)
  • 2 cloves of garlic

PREPARATION

  1. Hydrate the soy with water and let it stand for 20 minutes if the water is cold or 10 minutes if it is hot water.
  2. Meanwhile, cut the potatoes into small squares and fry them or bake them with oil.
  3. Also, cut and mix the onion and sweet pepper, and add the soy to the mixture.
  4. Add the 5 or 6 crushed tomatoes, and then the grated carrot. Once it boils, the sauce is ready.
  5. Add all the necessary spices such as salt, pepper, oregano, parsley, curcuma, etc.
  6. For the aioli, put in a bowl the two eggs, the garlic, salt and pepper and process it while little by little you pour half liter of oil. If you see that the sauce is a little loose, you can add a little bit more of oil.
  7. Take out the potatoes and add the Bolognese and the aioli.

You can also add to this recipe soy meatballs and vegetables to make it even more complete.
